It’s the 4th of July— and I didn’t realize it until today at noon.
I live in Cagliari, Sardinia and there aren’t many parades or fireworks happening in my neighborhood. In fact, upon realizing it was actually the 4th of July, I began frantically searching for American restaurants— and I found this promising smashburger spot. I also developed a huge craving for quintessentially American baked goods.
Apple Pie. Brownies. Chocolate Chip Cookies. Blueberry muffins.
In America, there is this one specific blueberry muffin. No, not the one from Costco (although that one is huge and amazing). The blueberry muffin I’m talking about is found in bakeries, wrapped in brown parchment paper and lovingly sprinkled with crisp topping. It’s incredible. With a cup of coffee in the morning? Forget it.
And listen, there’s a lot to be said for Italian baking, but sometimes you just want a blueberry muffin and a cup of filtered drip coffee— like an American.
So, this is my blueberry muffin recipe— transcribed straight from my notes app. Over the years, I have tweaked it to include a fluffier crumb and added the crisp topping. Optional tip: zest the baked muffins with lemon before serving— because lemon and blueberry are literally soulmates.
